We know that products we all buy affect us and our environment. We believe that every product and service in the modern society should be designed and sold with circularity in mind. BRØL is a fiercely independent nano brewery and fermentary that’s empowering individuals to fight food waste – one sip at a time. Currently on the market our sustainably crafted products are made with fresh unsold bread provided by specially selected Danish bakeries. We transform this surplus produce into intense, flavour packed beers, giving our drinkers a deliciously simple way to tackle a truly global issue. Our mission does not stop with beer nor with bread wastage, we are about using surplus ingredients from food system and nature and transforming it into delicious beverages. We emerged among a community of Copenhagen’s radical activists and environmental innovators in 2017. Operating at the grass roots level, we created hands-on solutions that targeted major excesses in the city’s food production. But it wasn’t long before we realised that our efforts to redistribute surplus fruit and veg’ could also incorporate more intuitive forms of upcycling. And with this in mind, we set about examining how we could revolutionise the country’s most loved drink: beer. You’re probably aware that we’re currently living through a food waste epidemic. Roughly 1.3 billion tons of edible produce is thrown away, globally, each year. Baked goods are in fact one of the most problematic food types, with over 40 percent of bread-based items needlessly condemned every single day. However, we’ve perfected recipes that don’t require resource heavy enhancers to create beers brimming with character. Making our brews with fresh, local wheat loafs, we are able to produce beautiful flavour profiles, while at the same time recycling an otherwise wasted food source.
